Lamb-Stuffed Eggplants with Aleppo Butter and Berry Ice Cream Unveiled.

A culinary delight awaits with a menu that brings together the robust flavors of spiced lamb-stuffed aubergines and the refreshing taste of a berry-ripple tahini ice cream. The savory dish features tender aubergines filled with seasoned lamb, tomatoes, and herbs, topped with aromatic Aleppo chilli butter. To complement this, a smooth, no-churn dessert combines the tartness of berries with the nutty richness of tahini, offering a perfect end to the meal.

The lamb-stuffed aubergines require 15 minutes of preparation, 20 minutes of salting, and an hour and a half of cooking, serving between four to six people. Begin by halving and scoring five medium aubergines, then salting them generously. After 20 minutes, dry them and roast in a pre-heated oven at 220C/200C fan/gas 7 for about 30 minutes. The filling is made by browning 400 grams of lamb mince in olive oil, then adding finely chopped onions, garlic, a diced green pepper, cherry tomatoes, and spices including cumin and cinnamon. After cooking for 10 minutes, add red pepper paste and chopped tomatoes, allowing it to reduce before spooning over the roasted aubergines and baking further.

The dish is completed with a spicy butter made by melting 50 grams of unsalted butter and mixing it with Aleppo chilli. The butter is drizzled over the aubergines, which are then garnished with parsley and served alongside Greek yogurt. For those looking to enhance their meal, pairing the dish with warm bulgur, rice, or flatbreads, and a parsley-and-onion salad is recommended.

For dessert, the berry-ripple tahini ice cream can be prepared in five minutes, cooked for 25 minutes, and needs to freeze for at least four hours. This recipe serves four to six people. The process starts by softening 200 grams of mixed berries with honey over low heat. Once cooled, the berries are layered with a mixture of whipped double cream, tahini, vanilla essence, condensed milk, and Greek yogurt in a freezer-safe container. This is then frozen until set. Serve the ice cream with biscuits and perhaps a sprinkle of toasted sesame seeds for added texture.

This menu seamlessly combines rich, savory notes with a sweet, creamy conclusion, creating a satisfying dining experience for any occasion. The contrasting flavors and textures are sure to impress, making it an ideal choice for those seeking both comfort and culinary adventure.
